Ιs a classic blend on Crete.This wine is 65% Kotsifali and 35% Mandilari. Our approach
though is not classic at all. Our Kotsifali grapes, sourced from 24 years old vineyards on
limestone at 350m altitude, are sorted and then fermented at very low temperatures,
Mandilari on the other hand harvested from lower altitudes (200m ) to achieve maturity , is
sorted, destemmed, 50% of the berries are crushed and the rest are left intact to retain
fruit and avoid aggressive tannins. Both are carefully monitored not to exceed extraction
nor tannin levels. Lightly pressed and then stored for a year in the stainless steeel tank to
mature. No oak treatment for this 65% Kotsifali – 35% Mandilari blend. Since this is one of
our most popular wines, we try to source the best grapes from various sites. The wine
speaks of its origin and has a beautiful complexity. Everybody admires the fruit-forward
aspect of fresh berry notes and nuances of light spice but also the ease of drinking it.
Acidity is focused, not dominant, and gives a very pleasant mouth feel.

Elevated notes of black cherries, sage and pomegranate liquor with a quick flash of sweet
paprika in the beginning followed by bright raspberry on the nose. Approachable on the
palate, with gentle tannins, straightforward berry style flavors and just a touch of thyme.
Very elegant alcohol level wraps the wine offering the necessary balance. This ia a very
versatile red and can be enjoyed even a bit chilled. Would pair perfectly with a cheese
platter, light poultry, or red sauce pasta.
