Vinification: Whole bunches are pressed in a membrane press, fermented at a controlled temperature of 18 °C with low sulphur and no chemical additives, experience a second fermentation in the bottle, age sur lie for 9–18 months and are released three months after disgorgement.
Tasting note: With a fruity, mineral, and slightly yeasty nose featuring aromas of strawberry and raspberry, this cold-climate sparkling wine has everlasting tiny bubbles, an impressive structure supported by acidity and gentle tannins, and finishes with a long citrus aftertaste
