Grape Varieties: Xinomavro, ungrafted (90%) Assyrtiko (10%)
Vinification: Whole bunches are pressed in a basket press. Fermentation is temperature-controlled at 18–22 °C. Low sulphur is used with no chemical additives. It completes its second fermentation in the bottle and is aged on the lees for 12 months. The wine is released one month after disgorgement
Tasting note: Rich, yeasty nose with aromas of lime, pear, and strawberry. A mouth-filling, creamy mousse with everlasting tiny bubbles contrasts beautifully with its refreshing acidity. Balanced.
