The top Assyrtiko from Papargyriou Winery is produced from late harvest grapes (approximately mid-October) and undergoes fermentation with the pomace for 5-6 days, resulting in very low yields. It ages for 6-9 months in 500-liter barrels and is best enjoyed at a temperature of 11-13°C.

This wine boasts great aging potential and a rich body, offering a remarkable depth of flavor and a long-lasting finish.
